FOR THE CREPE
Ingredients:
- 1 cup of sifted plain flour
- 2 Eggs
- 1 cup of milk
- 1 teaspoon of caster sugar
- 3 tablespoons of melted butter
Combine all your ingredients in a blender until it is a smooth consistency
Strain the mixture into a jug to remove any solids
Cover the jug and set it aside for 15 minutes in room temperature
Heat a non-stick pan over medium heat and coat with melted butter
When hot, pour enough crepe mixture to cover the base of the pan
Cook until the underside is golden (around 1 minute), then use a spatula to flip the crepe over to cook the other side until it is golden as well
Slide the crepe onto a plate to cool
Complete with a scoop of gelato, add your choice of toppings and enjoy!
