The Gelatissimo Story
Our story began in 2002 where our first store opened in the heart of Sydney, right on King Street. The word-of-mouth spread and before long, there were queues out the door!
Today, our artisan gelato is made fresh in-store daily, with only the best ingredients. As well as our innovative flavours and indulgent ranges, We’re passionate about providing a range of vegan-friendly, made without dairy, and made without gluten options to suit all – we wouldn’t want you to miss out on a sweet treat with us! With an array of flavours available in-store, choosing is half the fun.
Obviously we believe the quality of our gelato is of utmost importance. Because we’ve got that down pat, it means we get to experiment with finding the latest mouthwatering creations including shakes, desserts, cakes, coffee and more.. Newly created ﬂavours are exclusive, offered to customers for a limited time only, and our way of saying “you’re special, we made this just for you”.
We’ve won dozens of awards for our gelato including Gold at the 2023 Australian Dairy Industry Awards, 2023 Royal Sydney Cheese & Dairy Show, Royal Queensland Cheese & Dairy Show & first place at the 2022 & 2023 World Dairy Expo.

We want to be the world’s number one gelato brand, and thanks to the popularity and desire for our delectable gelato reaching distant shores, we’ve been expanding our family of gelato stores all over the globe. Today we have stores in shopping centres, high streets and kiosks across Australia, as well as globally in Thailand, Hawaii, the Philippines, Singapore, Saudi Arabia, Bangladesh, India and the United States with even more in store.

Is this a full-time gig?
If you’re asking if owning a Gelatissimo means full-time involvement, then the answer is yes and lucky you! Welcome to the greatest job on earth. The responsibility of the Franchisee includes: day to day running of the store, training and development of staff, local marketing activities and financial control. We have observed that stores with owners/operators who are closely involved in the business perform the best. The passion and contribution they bring across various areas is a big factor in maximising the potential of the store. For this reason, we strongly recommended that the owner has a day-to-day involvement in their store.
How much will it cost to build a new store?
Typically this would range between AUD $300,000 – $450,000 (excluding GST). This depends on factors such as store size and the equipment that is required to support what you offer in your store. We are able to support stores of a variety of sizes and formats and we’ll work closely with you to find one that best suits your location.
How long does it take to open a store?
Altogether, we suggest allowing up to 20 weeks. If there is a site and lease available that suits your needs, the build phase is approximately 12 weeks long.
What assistance does Gelatissimo provide?

What are the franchise and marketing fees?
We pride ourselves in our competitive fee structure, with royalties charged at a flat rate per week regardless of volume. Many other franchise businesses will increase their royalties as your business grows, but this isn’t something we believe in.
The contribution to the shared marketing fund is 3% of your store’s turnover (excluding GST). Within that marketing contribution, 0.75% of your turnover is held for you to implement any local store marketing strategies. Provided that this is spent on the local marketing of your store, you have control over what this looks like!
What is the all-time favourite flavour?
We are best known and celebrated for our delicious award-winning, vegan-friendly Mango sorbet. Featuring Australia’s world famous, juicy Queensland Kensington Pride Mangoes, it’s a refreshing flavour that captures the essence of Summer! It’s been our number 1 flavour for a long period of time, but has more recently been challenged by our signature Salted Macadamia & Dulce De Leche as well as the classic favourite Cookies & Cream.
Choices for All is the centrepiece of our flavour range. We pride ourselves in meeting the demands of the widest possible range of customers and to provide flavours that suit their taste buds and dietary requirements. From the traditional options and family favourites, through to our decadent Deluxe Range, and our healthier low sugar and vegan options, we have over 50 different flavours available to choose from. Such a wide range of flavours means every store can cater and customise precisely to their own market, putting our customers and their preferences first!
