Who isn’t obsessed with pistachio at the moment? This baklava inspired sundae made with our Pistachio White Chocolate Cremino Gelato is just the fix!
Ingredients
- Gelatissimo’s Pistachio and White Chocolate Cremino Gelato
- 1/4 cup extra virgin olive oil
- 4-6 sheets fillo pastry, cut into triangles
- 1/2 cup crushed walnuts
- 1/2 cup crushed pistachios
- 1/2 tsp cinnamon
- 1 tbsp brown sugar
- 1/2 cup pistachio spread, melted
Method
- Add oil into saucepan over medium heat. Once oil is hot, carefully place cut up fillo pastry pieces into pot until crispy and brown on both sides (turn after 1 minute)
- Transfer to paper towel lined plate to drain any excess oil
- Make the nut topping by combining chopped pistachios, walnuts, brown sugar and cinnamon together and set aside.
- To assemble, place a few pieces of crispy fillo in the base of a cup. Top with a scoop of gelato, followed by a large spoonful of the nut topping. Top with a drizzle of pistachio topping.
- To create the ultimate indulgence, repeat the assembly step for a two or three scoop dream.
