Ingredients
- 1 cup milk
- 1/3 cup plain flour
- 1/4 cup cornflour
- 1/4 cup icing sugar
- 3 large eggs
- 2 drops yellow food colouring
- Canola oil spray
- 2x mangoes (fresh or tinned, Sliced)
Method
- Pre freeze gelato into a round mold by scooping a few small scoops onto glad wrap and then rolling into a cycler shape. Freeze for 3 hours.
- To make batter: Pour milk into a bowl then sift the flour, corn flour and icing sugar, whisking until lump free.
- Add eggs and food colouring, whisking until combined. Refrigerate for 1 hour.
- To make pancakes, heat a non stick pan with oil over medium to low heat. Once heated, pour batter into the middle and swirl to cover pan.
- Cook for 1 minute, cooking on one side only (do not flip the pancake)
- About halfway through cooking, use your spatula to loosen the edges so it doesn’t stick. Flip out on a plate. Don’t worry if it folds in half, once cool you will be able to flatten.
- Cool for 30 minutes.
- Place gelato and slice of mango onto pancake, folding up like a burrito.
