2 Calypso® mangoes, stoned, chopped and peel removed
3 cups chilled golden circle pine coconut juice
1 cup white coconut rum (or for a mocktail, replace with an extra cup of juice)
1 tbs lime juice
6 scoops of Gelatissimo Calypso® Mango and wattleseed gelato
Crushed ice to serve
- Line a baking tray with baking paper and arrange the chopped mango on the tray and place in the freezer until frozen
- Place frozen mango, pine coconut juice, rum (or additional juice for a mocktail), lime juice and gelato in a blender and blitz until smooth and pour over crushed ice.
- Garnish with sliced mango or lime zest. Serve immediately.
